Unless the Soundstream bridged amps are rated at 2 ohms, probably would not try it. Also putting bridged M-1.0t's on those speakers is a bad idea they will sound like crap and you run a good chance of damaging the amps or speakers (speaking from experience).
I see 2 options with the amps you have Kevin.
Option A. (which is what I would do) 2 M-1.0t's. 1 for the mids and highs, 1 for the bottom end. Of course your going to need some restraint when it comes to the volume. Different kinds of music will dictate that one. Start off with some Pink Floyd to get a better idea.
Option B. M-1.0t on the mids and highs, M-1.5 on the bottom end. See how that fares after trying option A.
Later if you can get your hands on some Silver 7t's or 9t's your search will be over on Carver amps for the Infinity's, unless you can get your hands on a TFM-75 or a PT-2400.
